Business spotlight: Pepper’s brings ‘fresh and fast’ style to Fort Morgan dining - Fort Morgan Times

Pepper’s restaurant has been open at 414 E. Railroad Ave. in Fort Morgan for about weeks now, serving quick, counter-style Mexican dishes with a focus on fresh flavor. The new restaurant’s owner hopes to offer locals and commuting workers a more casual option for a meal out of the house.

It’s the second restaurant venture from local business owner Francisco Flores, who has operated Acapulco Bay just a short ways over on the 200 block of Main Street with his family for 15 years. He said he hopes customers come to the new spot and find something different than they’re familiar with in town.

“I like the restaurants that try to work a little more for the people, to get them the good stuff,” Flores said. “And I like having a good place where people can feel comfortable.”

Pepper’s counter style will remind first-time customers of chain Mexican restaurants, like Qdoba or Chipotle, but Flores said the new restaurant is in no way run like a chain establishment. While the main idea behind Pepper’s is speedy and casual service, Flores said he and the small kitchen staff have not lost touch with the importance of fresh ingredients and real flavor.

“This is not just for me; it’s not like a big company coming in here to put in a restaurant,” Flores said. “Everything you see from me is hard work first.”

Pepper’s is maintained by three employees during typical days, with one cook churning out fresh servings of pork carnitas, queso, guacamole and other options in the kitchen, and two employees rolling burritos and making dishes up front. Flores said making sure the restaurant is efficient was a goal of his from the start.

The menu includes burritos, bowls, nachos, quesadillas, tacos and other common Mexican dishes, put together step-by-step when the customer orders at a counter. Customers choose a meat or veggie option for their meals, and then pick toppings from the fresh options laid out in front of them.

“I like to say to people to just come to try different ideas and have good food,” Flores said.

A typical meal there for one person looks like it costs around $12, with entree options beginning at $9.50. Flores said the idea is for Pepper’s to give customers a more laid-back, affordable Mexican meal.

The building on East Railroad Avenue has housed a number of restaurants before, and Flores said that it only made sense to open up Pepper’s in that spot. Over the last two years or so since Flores purchased the building, he redid the floors, ceilings and front facade to give the restaurant a clean and comfortable feel.

“Before we bought this place, we planned and knew we’d open a restaurant here,” Flores said.

A line of waiting customers excitedly formed at the Pepper’s counter before noon on Thursday, Jan. 23, and Flores said that’s been the case throughout the first two weeks of business. He knew he had a good product on his hands, and he could not wait to open up the restaurant two weeks ago so people could try out that product.

Flores said he opened Pepper’s for regular operation the day after the health inspector’s office gave its approval. He just couldn’t wait to start serving a new style of food, different from the large menu and sit-down style of Acapulco Bay.

“People respond really well here in Fort Morgan,” Flores said. “And that’s why I like working in Fort Morgan, because people respond well to my hard work.”

The Fort Morgan City Council approved Pepper’s liquor license application during a meeting on Jan. 21. Flores said he is looking forward to serving a few beers and maybe a house margarita on the rocks at the new restaurant.

Pepper’s is now open from 10 a.m. to 9 p.m. daily, but Flores said he is looking into potentially expanding the hours depending on how people respond during this first month. The restaurant is located at 414 E. Railroad Ave. in Fort Morgan.
